Kolhapuri Usal is a protein-rich Indian lentil curry that's both nutritious and deeply satisfying. This healthy vegetarian dish is ideal for meal prep, freezer-friendly, and supports a calorie deficit lifestyle.
Heat the vegetable oil in a large heavy-bottomed pot over medium heat. When hot, add cumin seeds and mustard seeds; allow them to sputter for about 30 seconds for aromatic flavor release.
Add the chopped onions and sauté for 5–6 minutes, stirring frequently, until golden brown without letting them burn.
Mix in the minced garlic, grated ginger, turmeric powder, and red chili powder. Stir for 1 minute over medium-low heat to prevent spices from scorching.
Turn the heat to medium-high, add tomatoes and potatoes, and cook for 3–4 minutes until tomatoes begin to break down and potatoes are partly softened.
Add mixed sprouted beans and the Kolhapuri masala. Stir well to coat the beans, then pour in water; cover and simmer over low heat for about 30 minutes until beans and potatoes are tender.
Uncover, add salt, adjust water for desired consistency, and let the curry simmer on low for another 5 minutes so flavors meld.
Turn off heat and garnish with fresh cilantro. Serve hot with rice or bread.
