Prized spring bamboo shoots are stir-fried with minimal seasoning to let their delicate flavor shine. This vegetarian, low calorie family dish is a seasonal delicacy in Eastern China.
Peel the fresh spring bamboo shoots and slice them thinly, then rinse in cold water to remove any bitterness.
Blanch the bamboo shoots in boiling water for 2 minutes to further reduce bitterness, drain immediately and set aside.
Heat 1.5 tbsp vegetable oil in a wok or large skillet over medium-high heat until shimmering.
Add the carrot slices and stir-fry for 1 minute, then add the blanched bamboo shoots and snow peas. Stir rapidly for even cooking.
Season with soy sauce, salt, sugar, and white pepper. Continue stir-frying for 2–3 minutes until all vegetables are crisp-tender and flavors meld.
Remove from heat promptly to preserve the delicate texture and serve hot as a main or side.
