Wheat noodles are tossed with fragrant cumin, dried chilies, and savory seasonings for a Northwestern Chinese flair. Bold and aromatic, this family-friendly bowl pairs beautifully with added protein like lamb or beef.
Cook the wheat noodles according to package instructions in boiling water until just tender but still chewy. Drain and set aside, tossing lightly with a little oil to prevent sticking.
Heat 2 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add cumin seeds and whole dried red chilies, toasting them for 1–2 minutes until the seeds are fragrant and the chilies darken slightly.
Stir in minced garlic and sliced onion. Sauté for 2–3 minutes, regulating the heat to ensure the garlic does not burn and onion turns translucent.
Add the cooked noodles to the skillet. Increase heat and toss well with tongs so the noodles absorb the flavored oil and aromatics evenly.
Pour in soy sauce, black vinegar, sugar, and salt. If using Sichuan peppercorn, add now. Stir-fry for another 1–2 minutes on high heat, letting the seasoning coat every strand. Taste and adjust salt as needed.
Finish by adding chopped scallions and cilantro. Toss just until greens wilt, then immediately remove from heat to avoid overcooking the herbs. Serve hot.
