Poori Bhaji Breakfast is a wholesome Indian breakfast dish that's quick to prepare and packed with flavor. This healthy vegetarian option is perfect for family mornings and fits a 1200 calorie or weight loss meal plan.
Boil the potatoes in a pot of water for 20 minutes over medium-high heat until fork tender. Drain, peel, and roughly mash while still warm.
In a large bowl, combine the whole wheat flour and a pinch of salt. Gradually add water while kneading to form a smooth, slightly stiff dough; cover and rest for 20 minutes.
To prepare bhaji: In a nonstick pan, heat 1 tablespoon oil over medium flame. Add cumin seeds and mustard seeds; let them crackle for 20 seconds. Stir in green chili and turmeric powder, sautéing for 1 minute.
Add mashed potatoes, peas, and salt. Mix well and sauté for 3–4 minutes. Sprinkle with chopped cilantro and keep warm on very low heat.
For poori: Divide the dough into equal balls. Roll each into a 4-inch circle, dusting lightly with flour. Heat remaining oil in a deep pan to 350°F (medium-high heat). Fry each poori for 30–45 seconds per side, pressing gently with a slotted spoon to puff up. Drain on paper towels.
Serve hot pooris with bhaji on the side. Garnish with extra cilantro if desired.
