Huevos rancheros tops crispy corn tortillas with fried eggs, ranchero sauce, and fresh toppings for a bold Southwestern breakfast. This high protein, vegetarian-friendly dish is a flavorful family morning tradition.
Preheat the oven to 200°F to keep tortillas warm. Heat 1 tbsp olive oil in a large skillet over medium heat, and lightly fry each tortilla for 30–45 seconds per side until crisp. Set aside on a towel-lined plate and keep warm in the oven.
In another skillet over medium heat, add 1 tbsp olive oil. Crack eggs gently into the pan, being careful not to crowd them. Fry eggs until whites are set but yolks remain runny, about 3 minutes. Season lightly with salt and pepper.
Warm black beans in a small saucepan over low heat, mashing slightly and stirring occasionally, for about 5 minutes.
In a separate saucepan, heat the ranchero sauce over medium-low until just simmering, stirring occasionally so it doesn’t scorch.
To assemble: place two crisp tortillas on each plate, spread with warm black beans, top each with a fried egg, then spoon ranchero sauce generously over the eggs.
Slice avocado and arrange on top. Sprinkle with queso fresco and fresh cilantro for vibrant flavor and color. Serve immediately.
