Fresh shrimp are delicately stir-fried with premium Longjing tea leaves in this refined Hangzhou specialty. Light, fresh, and high in protein, this elegant dish exemplifies clean eats Chinese cooking.
Brew the Longjing tea: Add 2 tbsp tea leaves to 1/2 cup hot (not boiling, ~175°F) water. Steep for 3–4 minutes. Strain and reserve both the infused liquid and softened tea leaves.
In a bowl, combine peeled shrimp with egg white, Shaoxing wine, cornstarch, and half the salt. Gently toss and let marinate for 10 minutes.
Heat a seasoned wok or skillet on medium-high. Add 2 tbsp neutral oil, swirling to coat the surface. Just before smoking point, lower heat to medium.
Gently slide in the marinated shrimp in a single layer. Stir-fry continuously until shrimp turns opaque and just pink, about 90 seconds. Do not overcook.
Quickly add the reserved tea leaves, white pepper, sugar, and remaining salt. Toss for 20–30 seconds, then add 2 tbsp of the brewed tea liquid. Stir-fry briefly to glaze, then remove from heat.
Plate immediately, spooning any pan juices over the shrimp. Serve hot for peak aroma and tenderness.
