Pat tofu skin sheets gently with a damp towel, then trim to manageable rectangles for rolling.
In a skillet over medium-high heat, sauté chopped shiitake mushrooms, carrot, bamboo shoots, and scallion in 1 tsp sesame oil until softened, about 4 minutes.
Crumble the firm tofu into the vegetable mixture; add soy sauce, grated ginger, white pepper, and cornstarch, stirring thoroughly until evenly coated. Cook for another 2 minutes to reduce moisture.
Spread a tofu skin sheet flat, place a portion of filling at one end, and roll tightly. Seal the edge with a cornstarch slurry for best cohesion.
In a skillet, heat the remaining sesame oil over medium heat. Pan-fry the rolls seam side down for 2–3 minutes until lightly golden, then turn to brown all sides evenly. Optionally, add 1/4 cup water, cover, and braise for 3 minutes for a moist finish.
