Spread half of the butter evenly on one side of each slice of rye bread.
Lay two bread slices, butter side down, on a cutting board. Spread mustard evenly on the unbuttered side of each.
Layer 3 oz sliced ham and 2 slices of Swiss cheese on each prepared bread slice. Sprinkle black pepper over the cheese.
Top each with the remaining bread slices, buttered side up, forming two sandwiches.
Heat a nonstick skillet over medium-low. Cook sandwiches for 3–4 minutes per side, pressing lightly with a spatula, until the bread is crisp and golden and cheese is melted. Slice and serve immediately.
