Pan-fried cube steak smothered in savory onion gravy is a classic Southern family supper. High in protein and wonderfully comforting, it pairs perfectly with mashed potatoes and biscuits.
Season cube steaks on both sides with kosher salt, black pepper, garlic powder, and paprika.
Dredge steaks in flour, shaking off excess. Set aside on a plate.
Heat vegetable oil in a large skillet over medium-high heat. When shimmering, add steaks and pan-fry 2–3 minutes per side until browned. Remove steaks to a plate.
Add sliced onions to the same skillet. Reduce heat to medium and sauté, scraping up browned bits, until onions are soft and golden, about 8–10 minutes.
Sprinkle some remaining flour (about 1 tablespoon) into onions and mix; then pour in beef broth slowly, stirring to create a gravy. Simmer until thickened, about 3–4 minutes.
Return browned steaks (and any juices) to the skillet, nestling them in the onion gravy. Cover and simmer on low for 10–15 minutes until the steaks are fork-tender.
Taste gravy and adjust seasoning as needed before serving hot with plenty of onion gravy spooned over each steak.
