Akki Roti Rice is a flavorful Indian rice dish with aromatic spices and a distinct regional character. This vegetarian preparation is a versatile family side dish that pairs well with curries and raita.
Rinse the basmati rice thoroughly under cold water, then soak it for 20 minutes to ensure fluffy grains after cooking.
In a saucepan, add 2 cups water and soaked rice. Bring to a boil, reduce heat to low, and cover. Allow rice to cook undisturbed for 15–18 minutes, then let rest off the heat for 5 minutes.
While the rice is resting, heat oil in a large skillet over medium heat. Add mustard seeds; when they start to pop, add cumin seeds and sauté for 20 seconds.
Add chopped onion and green chili to the skillet; cook on medium heat until onion turns translucent, stirring frequently to avoid browning.
Fold in the cooked rice, fresh grated coconut, and chopped cilantro. Season with salt and black pepper, gently mixing to combine over low heat so rice does not break. Serve hot.
