Pat the lamb leg dry and score the fat lightly; bring to room temperature for even roasting.
Rub the meat with a mixture of olive oil, kosher salt, black pepper, and half of the chopped rosemary and garlic, pushing into the scores and crevices for deep flavor.
Arrange the lamb in a roasting pan with lemon slices, remaining rosemary sprigs, and garlic cloves scattered around. Pour the wine into the pan but not onto the meat.
