Stewed tomatoes and okra simmered together with onions and spices is a traditional Southern vegetarian side dish. This healthy, fresh combination is a family dinner staple that celebrates summer garden produce.
Trim ends from the okra and slice into 1/2-inch rounds. Dice tomatoes and chop onion for even cooking.
Heat olive oil in a large skillet over medium heat. Add chopped onion and cook for 3–5 minutes, stirring often, until translucent without browning.
Add minced garlic and cook for 1 minute, just until fragrant. Then stir in sliced okra and diced tomatoes.
Season with kosher salt, black pepper, and paprika. Reduce heat to low, cover, and simmer for 20–25 minutes, stirring occasionally to prevent sticking.
Uncover and simmer for an additional 5 minutes to reduce moisture and concentrate flavors. Taste and adjust seasoning before serving.
