Start your day with Handvo Breakfast, a traditional Indian breakfast that's light, nutritious, and satisfying. This healthy vegetarian dish is family-friendly and works well for calorie deficit and clean eating goals.
In a large bowl, combine rice flour, chickpea flour, and plain yogurt. Mix well, then add enough water (about 1/2 cup) to form a thick batter. Cover and let it rest for 20 minutes.
Fold in grated mixed vegetables, salt, turmeric powder, red chili powder, and lemon juice. Stir until fully incorporated.
Just before cooking, add baking soda and mix gently to aerate the batter.
Heat 1 tbsp oil in a non-stick pan over medium heat. Add mustard seeds and cumin seeds, letting them splutter for 20 seconds. Pour the prepared batter evenly into the pan.
Sprinkle sesame seeds over the batter's surface. Cover the pan and cook on low heat for 20–25 minutes until the bottom is golden and a skewer inserted comes out clean.
Drizzle the remaining oil along the edges. Flip the Handvo once the edges pull away from the pan, and cook another 5 minutes uncovered to crisp up the top.
Remove from the pan, let the Handvo rest for 5 minutes. Slice into wedges and serve warm.
