Sweet and tender Wuxi spare ribs are braised in a rich, caramelized soy sauce. A protein-packed, family dinner classic with bold, satisfying flavor.
1. Rinse pork spare ribs and pat dry; cut into individual pieces for even cooking.
2. In a large pot, add ribs and cover with water. Bring to a boil over high heat, skim off foam, then drain and rinse to remove impurities.
3. Heat a clean pot over medium-high. Add Shaoxing wine, scallions, ginger, soy sauce, and dark soy sauce. Add ribs and sauté for 2 minutes until fragrant.
4. Add rock sugar; cook, stirring, until the sugar melts and begins to caramelize into the sauce.
5. Pour in rice vinegar and water, bring to a boil, then reduce heat to low. Cover and simmer for 80–90 minutes, stirring occasionally, until ribs are tender and sauce is thickened.
6. Uncover and raise heat to medium-high, simmer to further reduce sauce and glaze ribs, turning ribs to coat evenly. Serve hot.
