Delicate and melt-in-your-mouth, Barfi Plain is a classic Indian mithai crafted with care and tradition. This premium sweet is essential for Diwali gifting, weddings, and family celebrations.
Line an 8-inch square pan with parchment paper and lightly grease it with butter for easy removal.
In a heavy-bottomed pan over medium heat, melt the butter. Add whole milk and bring it just to a simmer, stirring frequently to prevent scalding.
Lower the heat. Gradually whisk in milk powder, stirring constantly to prevent lumps, until fully incorporated and smooth.
Add sugar and cardamom powder. Continue to cook on medium-low heat, stirring continuously, until the mixture thickens and begins to leave the sides of the pan (about 18–20 minutes).
Once a dough-like consistency forms and the mixture comes together, immediately transfer it to the prepared pan. Pat it evenly using a greased spatula, then sprinkle chopped pistachios on top and gently press them in.
Let the Barfi cool at room temperature for 1 hour to set. Once firm, cut into 12 squares with a sharp knife and serve or store airtight.
