A puffy German pancake baked until dramatically risen and golden is a show-stopping vegetarian family breakfast. Served with lemon juice and powdered sugar, this Dutch baby-style treat is simple yet impressive.
Preheat your oven to 425°F (220°C). Place a 10-inch oven-safe skillet or baking dish in the oven to heat.
In a mixing bowl, whisk together the eggs vigorously until foamy, then add milk, flour, granulated sugar, vanilla extract, and salt. Whisk until very smooth and free of lumps.
Carefully remove the hot skillet from the oven and add the unsalted butter. Let it melt and swirl to coat the bottom and sides quickly.
Immediately pour the batter into the hot, buttered skillet and return it to the oven without delay to maintain high heat.
Bake for 18–22 minutes, until dramatically puffed and golden brown at the edges. Do not open the oven door during baking for best rise.
Remove from oven, let the pancake deflate slightly, then dust generously with powdered sugar and drizzle with fresh lemon juice before serving.
