These tender lamb chops were the star of our spring dinner! Perfectly seared with bright, herbaceous mint chimichurri that celebrates fresh spring flavors.
Pat the lamb rib chops dry and season both sides generously with kosher salt and black pepper.
Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering. Sear the lamb chops for 3–4 minutes per side, until deeply browned and the internal temperature reaches 130°F for medium-rare.
While the lamb is resting, make the mint chimichurri: finely chop mint, parsley, and shallot. Combine with crushed red pepper flakes and red wine vinegar in a medium bowl.
Whisk in 1/4 cup extra-virgin olive oil until the sauce is glossy and slightly chunky. Adjust seasoning with a pinch more salt if desired.
Serve the lamb chops warm, spooned generously with the fresh mint chimichurri. Garnish with additional herbs if desired.
