Remove the beef tenderloin from the refrigerator, pat dry, and let it rest at room temperature for 45 minutes for even roasting.
Preheat your oven to 450°F (232°C). Rub the tenderloin with olive oil, kosher salt, and black pepper, pressing the seasoning evenly across the surface.
Place the beef on a rack in a roasting pan. Roast for 15 minutes at high heat to develop a caramelized crust.
Reduce the oven temperature to 325°F (163°C). Tuck rosemary sprigs and smashed garlic cloves around the roast, then continue roasting for 25–35 minutes, or until an instant-read thermometer reaches 125°F (52°C) for medium-rare.
Immediately transfer the roast to a cutting board and tent loosely with foil. Rest for at least 15 minutes to redistribute juices. Just before slicing, melt butter over the top and slice against the grain.
