Trim excess fat from the brisket, leaving about 1/4 inch cap for moisture retention and flavor.
Mix kosher salt, coarse black pepper, paprika, garlic powder, and onion powder thoroughly in a bowl. Pat the brisket dry and evenly coat all sides with the seasoning blend.
Let the seasoned brisket rest at room temperature for 45–60 minutes to allow the rub to adhere and create a better bark.
Preheat your smoker to 250°F and stabilize the heat using seasoned hardwood (oak or hickory). Place the brisket fat-side up directly on the grates.
Smoke the brisket for 6–8 hours, spritzing with water every 60–90 minutes to maintain moisture and help the bark develop.
