Rumali Roti is a traditional Indian flatbread that's a healthy, whole-grain staple of everyday meals. This simple vegetarian bread is low in calories and the perfect family dinner accompaniment to any curry.
In a large bowl, combine the whole wheat flour, all-purpose flour, and salt evenly for uniform flavor.
Gradually add warm water while kneading, forming a soft, elastic dough; knead for 8–10 minutes until smooth.
Add olive oil to the dough, knead for another 2 minutes, cover, and rest at room temperature for at least 30 minutes.
Divide the rested dough into 6 equal portions, roll each ball extremely thin (almost translucent) using a floured rolling pin.
Heat an inverted wok or large nonstick skillet on high until very hot; carefully place one dough round on the pan and cook for 30–40 seconds, flipping once as soon as bubbles appear. Do not overcook to preserve softness.
Repeat with remaining dough, keeping cooked rotis stacked and wrapped in a cloth to retain moisture and pliability until serving.
