Crispy street-style scallion pancakes with flaky layers and savory green onion are irresistible. A vegetarian, fresh family snack or breakfast with bold aroma.
In a large mixing bowl, combine 2 cups of all-purpose flour with 0.5 tsp salt. Gradually pour in 0.75 cup hot water, stirring constantly until a shaggy dough forms.
Knead the dough for 5–7 minutes on a lightly floured surface until smooth, then cover with a damp towel and let rest for 30 minutes to relax the gluten.
Finely chop 8 scallions and set aside. Divide the rested dough into 4 equal balls.
Roll out one dough ball into a thin rectangle (about ⅛-inch thick). Brush with 1 tbsp vegetable oil and drizzle 0.5 tbsp sesame oil; sprinkle ¼ of the scallions evenly over the surface.
Roll up the dough tightly into a log, coil it into a spiral, then flatten gently into a round pancake using a rolling pin. Repeat for remaining dough.
Heat 1 tbsp vegetable oil in a nonstick skillet over medium heat. Cook each pancake for 2–3 minutes per side, pressing occasionally, until crisp and golden brown.
Remove from the pan and slice into wedges. Serve hot as a snack or breakfast.
