A grand platter of mixed boiled meats served with green sauce from Piedmont. This high protein mediterranean family feast is a carnivore tradition served during Italian winter celebrations.
Fill a large stockpot with water and add beef brisket, veal shank, and pork loin. Bring to a gentle simmer over medium heat, skimming foam for the first 20 minutes.
Add carrots, celery, onion, bay leaves, kosher salt, and peppercorns. Maintain a low simmer (not a boil) for 2 hours, keeping the lid partially off.
Add the whole chicken to the pot. Continue simmering gently for another hour, checking that all meats are tender but not falling apart.
Prepare the Piedmontese green sauce: finely chop parsley, garlic, and capers. Stir in olive oil and white wine vinegar. Season to taste.
Remove meats and vegetables. Slice and arrange on a platter. Serve immediately with the green sauce and a ladle of hot broth on the side.
