Pumpkin cooked in piloncillo syrup with cinnamon is a comforting Mexican fall dessert. This vegetarian, family-friendly treat is a naturally sweet, warm confection of the autumn season.
Rinse the pumpkin thoroughly, then cut into 2-inch thick wedges, leaving the skin on for structure.
Add water to a large, heavy-bottomed pot and stir in the piloncillo, cinnamon sticks, and orange peel.
Arrange the pumpkin wedges in the pot so each piece is slightly submerged in the syrup mixture.
Bring to a gentle boil over medium-high heat, then reduce to low and cover. Simmer for 60–75 minutes, occasionally basting the pumpkin with syrup.
Once pumpkin is fork-tender and the syrup has thickened, uncover and simmer 10–15 minutes more to slightly reduce the syrup. Serve warm, spooning syrup over each wedge.
