Thick wheat noodles are stir-fried with pork, bok choy, and a rich dark soy sauce for a deeply caramelized flavor. This hearty Shanghai family staple is protein-loaded and quick for weeknight cooking.
Slice the pork shoulder thinly against the grain and marinate briefly with 1/2 tbsp light soy sauce and a pinch of white pepper.
Boil the thick wheat noodles until just al dente, then drain well and toss lightly with 1/2 tbsp vegetable oil to prevent sticking.
Heat a large wok over high heat and add half the vegetable oil. Quickly stir-fry the marinated pork until just cooked and browned with some caramelization; remove to a plate.
Add remaining oil, then stir-fry bok choy, carrot, and most of the green onions (reserve some for garnish) until crisp-tender; use high heat and stir constantly to avoid steaming.
Add noodles to the wok, pour in all sauces, sugar, and cooked pork. Stir-fry vigorously for 2–3 minutes, ensuring the dark soy caramelizes and coats noodles evenly without clumping. Finish with sesame oil and reserved green onions before serving.
