Kala Jamun is a flavorful Indian dish that captures the essence of traditional home cooking. This family recipe is passed down through generations and remains a cherished part of Indian culinary culture.
In a large mixing bowl, combine khoya, crumbled paneer, all-purpose flour, semolina, baking soda, and heavy cream. Mix thoroughly until the dough comes together; knead gently until smooth and slightly sticky.
Cover the dough with a damp cloth and let it rest for at least 15 minutes to allow moisture to even out.
Meanwhile, prepare the sugar syrup: Heat 2 cups sugar and 1.5 cups water in a saucepan over medium flame, stirring until sugar dissolves. Add lemon juice and simmer for 10 minutes. Stir in rose water and cardamom powder, then keep the syrup warm on low heat.
Divide the dough into equal portions and roll into smooth balls without cracks. Ensure each ball is compact to prevent disintegration during frying.
Heat oil in a deep fry pan on medium-low. Fry the balls slowly, stirring constantly for even browning, until they turn a deep blackish-brown color but not burnt (about 8-10 minutes per batch). Manage heat carefully to prevent rapid coloring.
Drain the fried jamuns and immediately immerse them in the warm sugar syrup. Soak for at least 2 hours—turn them occasionally for even absorption.
Serve Kala Jamun warm or at room temperature with a little syrup spooned over each piece.
