Creamy Tuscan chicken simmered with sun-dried tomatoes, spinach, and garlic in a Parmesan cream sauce is pure comfort. This mediterranean-inspired chicken dish is rich in protein and perfect for a family dinner.
Season chicken breasts on both sides with salt, pepper, and half the dried Italian herbs.
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add chicken breasts and sear 4–5 minutes per side, until golden but not fully cooked through. Remove chicken and set aside.
Add remaining 1 tablespoon olive oil to the skillet. Reduce heat to medium. Stir in minced garlic and cook for 30 seconds until fragrant, stirring to avoid burning.
Add sun-dried tomatoes to the pan and sauté for 1 minute. Deglaze pan with a splash of heavy cream, scraping up any browned bits.
Pour in remaining heavy cream and bring to a gentle simmer over medium-low heat. Stir in Parmesan cheese until melted and the sauce is smooth.
Fold in spinach and the rest of the Italian herbs, stirring until spinach wilts.
Return chicken to the skillet, nestling into the sauce. Reduce heat to low, cover, and simmer 5–7 minutes, or until chicken is cooked through. Carefully monitor so the sauce does not boil.
Uncover, spoon sauce over chicken, and serve hot with extra Parmesan if desired.
