Kurkuri Bhindi is a wholesome Indian vegetable dish cooked with traditional spices and fresh ingredients. This healthy vegetarian preparation is a family staple that supports clean eats and balanced nutrition.
Wash and completely dry the okra with a clean kitchen towel. Slice off the stems, then cut them lengthwise into thin strips for maximum crispiness.
Transfer the sliced okra to a large bowl. Add the onions and toss well for even distribution.
Add chickpea flour, rice flour, and all seasonings (salt, ground turmeric, red chili powder, ground coriander, garam masala) to the bowl. Gently mix, ensuring every strip is well coated. Do not add water; let the moisture from okra help the coating adhere.
Heat canola oil in a large skillet over medium-high heat. When the oil is hot but not smoking, scatter the coated okra in a thin, even layer.
Fry without stirring for 2–3 minutes, then gently toss and cook further for 7–10 minutes, stirring occasionally, until the okra is golden and crisp. Remove to a plate lined with paper towels to absorb excess oil. Serve immediately for best texture.
