Add the Arborio rice to the pan and stir continuously for 2 minutes, allowing the grains to toast and become glossy.
Pour in the prosecco and cook over medium-high heat, stirring frequently until the liquid is almost absorbed, about 3–4 minutes.
Reduce the heat to medium-low and add warmed vegetable broth one ladle at a time, stirring gently and allowing each addition to absorb before adding more, for 18–20 minutes.
