Baked anchovies with garlic and breadcrumbs are a simple southern Italian classic. This high protein mediterranean dish is a fresh, healthy family dinner rich in omega-3 fatty acids.
Preheat oven to 400°F (200°C) and brush a baking dish with a thin layer of olive oil for crisping the base.
Arrange half of the anchovies skin-side down in a single layer; season lightly with salt and pepper for even flavor.
In a bowl, mix breadcrumbs, parsley, minced garlic, salt, black pepper, and half of the olive oil until the mixture is evenly moistened.
Sprinkle half the seasoned breadcrumb mixture evenly over the anchovies, then lay the remaining anchovies on top; finish with the rest of the breadcrumb mixture and a drizzle of olive oil.
Bake uncovered for 18–20 minutes, until the top is golden brown, anchovies are opaque, and juices bubble around the edges; scatter sliced lemon and let rest for 2 minutes before serving.
