Soak the dried tofu skin sheets in warm water for 20 minutes until soft and pliable, then drain well and pat dry.
Slice the softened tofu skin into thin noodle-like strips, about ¼ inch wide, and set aside.
In a medium pot, bring vegetable broth to a gentle boil over medium heat. Add cleaned and sliced shiitake mushrooms, and simmer for 8 minutes.
Add bok choy and continue to simmer for 3 minutes, maintaining a gentle simmer to avoid breaking the tofu noodles later.
