Wash whole eggplants and tomatoes, then prick them with a fork. Roast them directly over an open flame or broil in the oven on high (450°F) until the skins are charred and the insides are soft, about 15-20 minutes.
Allow the roasted vegetables to cool briefly. Peel off and discard the charred skins from the eggplants and tomatoes while they are still warm to ensure maximum smoky flavor.
Transfer the peeled eggplants and tomatoes to a mixing bowl. Using a fork or potato masher, mash them together until mostly smooth but still slightly chunky.
Finely chop the red onion, green chili, and fresh cilantro. Add them to the mashed mixture.
Drizzle in mustard oil, squeeze in lemon juice, and sprinkle with salt. Mix thoroughly to combine, taste, and adjust seasoning if necessary. Serve at room temperature with warm roti or rice.
