Rajbhog is a beloved Bengali sweet crafted from fresh chhena and soaked in aromatic syrup. This iconic dessert is a highlight of family celebrations and a pride of Bengali culinary tradition.
Boil whole milk in a heavy-bottomed pot, stirring occasionally, then lower the heat and add lemon juice gradually. Stir gently until the milk curdles and separates from the whey.
Strain the curdled milk through a cheesecloth immediately and rinse the chhena under cold water to remove any acidity. Squeeze out excess moisture but don't let it dry completely; allow it to rest for 10 minutes.
Transfer the chhena to a flat surface and knead for 8–10 minutes until smooth. Mix in the fine semolina for texture and divide into equal portions.
Stuff each portion with a small amount of chopped pistachios, almonds, and a saffron strand. Shape into smooth balls, sealing well to prevent splitting during cooking.
In a large wide pan, prepare sugar syrup by boiling sugar and water together for 5 minutes over medium-high heat. Add cardamom powder for aroma. Gently add the chhena balls, cover, and cook over medium-high for 18–20 minutes. They will puff up; do not lift the lid during cooking.
Turn off the heat. After 5 minutes, add rose water. Allow Rajbhog to soak in the syrup for at least 2 hours before serving.
