"Bride's kisses" are delicate jam-filled sandwich cookies from Mexican bakeries. This charming, family-friendly treat is a sweet, traditional confection perfect for celebrations.
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, cream together the unsalted butter and powdered sugar until light and fluffy, about 2–3 minutes on medium speed.
Add the egg yolks, vanilla extract, and salt, mixing until fully incorporated.
Gradually sift in the all-purpose flour, mixing just until a soft dough forms; avoid overworking to prevent toughness.
Scoop small portions of dough (about 1 tablespoon each), roll them into balls, and slightly flatten. Place on the prepared sheet, spacing 2 inches apart.
Bake for 12–15 minutes until the bottoms are lightly golden but the tops remain pale. Cool the cookies completely on a wire rack.
Spread raspberry jam on the flat side of half of the cookies, then sandwich with the remaining cookies, pressing gently.
Dust the assembled sandwich cookies generously with extra powdered sugar before serving.
