Tender sliced pork is stir-fried with crunchy wood ear mushrooms and a light savory sauce. This healthy, high protein combination is low in calories and pairs well with a dash diet plan.
Soak the dried wood ear mushrooms in warm water for 20–30 minutes until fully rehydrated, then drain and slice into bite-sized pieces.
Slice the pork loin thinly against the grain; toss with cornstarch and a pinch of black pepper for tenderness.
Heat a nonstick skillet or wok over medium-high heat. Add 1 tsp sesame oil, then sauté garlic until fragrant, taking care not to brown.
Increase the heat to high, add pork, and quickly stir-fry for 2–3 minutes until just turning white. Remove pork to a plate to keep it juicy.
Add carrots and soaked wood ear mushrooms; stir-fry for 2 minutes. Return pork and any juices to the pan.
Add soy sauce and oyster sauce; toss all ingredients together, letting the sauce thicken and coat evenly for 1–2 minutes. Stir in green onion, taste, and adjust seasoning if needed.
Serve hot immediately, ensuring the pork is just cooked and mushrooms remain crunchy.
