Chili dogs topped with savory meat chili, mustard, and onions are a fun, family-friendly American classic. Quick to assemble and perfect for cookouts, game days, and casual weeknight dinners.
Set a medium skillet over medium-high heat. Add the ground beef and cook, stirring and breaking the meat apart, until it is well browned, about 5–6 minutes.
Lower the heat to medium. Stir in half of the diced onion and cook for another 2 minutes until softened, stirring occasionally to prevent sticking.
Mix in chili powder, garlic powder, salt, black pepper, ketchup, and water. Bring to a gentle simmer, then reduce heat to low. Simmer uncovered for 10 minutes, stirring every couple of minutes so the chili thickens without burning.
While the chili simmers, grill or pan-sear the hot dogs over medium heat for 3–5 minutes, turning occasionally for even browning.
To assemble, place each hot dog into a bun. Spoon about 2–3 tablespoons of hot chili over each hot dog, drizzle with yellow mustard, and sprinkle generously with reserved raw chopped onion. Serve immediately.
