Savory shiitake mushrooms are stir-fried with tender bok choy for a classic vegetarian pairing. This healthy, low calorie family side dish is a cornerstone of clean Chinese vegetable cooking.
Trim shiitake mushrooms and slice into 1/4-inch pieces; wash and chop bok choy into 2-inch segments, separating stems and leaves.
Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat until just shimmering; add sliced garlic and sauté for 20 seconds until fragrant.
Add shiitake mushrooms to the pan and stir-fry for 2–3 minutes over medium-high heat, allowing mushrooms to release moisture and start to brown.
Add bok choy stems first; stir-fry for 1 minute, then add bok choy leaves. Continue to toss constantly over high heat for another 2 minutes until just wilted.
Pour in soy sauce and oyster sauce, sprinkle salt and black pepper, and toss quickly to coat. Drizzle with sesame oil, stir well, and remove from heat to prevent overcooking. Serve immediately.
