Balushahi is a treasured Indian confection that brings sweetness and joy to every celebration. This traditional dessert is lovingly prepared for family festivals, religious occasions, and special moments.
In a large mixing bowl, combine all-purpose flour, baking soda, and baking powder. Whisk well to evenly distribute the leaveners.
Add unsalted butter and plain yogurt to the dry mixture. Using your fingertips, gently rub in the butter until the dough has a coarse, crumbly texture—do not overmix.
Sprinkle in 2 tbsp water, and gently bring the dough together. Do not knead; let it rest covered for 20 minutes to relax the gluten.
While the dough rests, add sugar and 0.5 cup water to a saucepan. Bring to a boil, then simmer on medium heat for 8–10 minutes until you achieve a single-thread consistency. Add lemon juice and cardamom powder and mix well; keep syrup warm.
Heat vegetable oil in a heavy pan over low-medium heat, maintaining a temp around 300°F. Divide dough into small balls, flatten slightly, and make a small indentation in the center of each.
Fry the Balushahi in batches, keeping the oil at a steady low-medium heat. Spoon hot oil over the tops and fry each side for 8–10 minutes until golden and crisp outside but tender inside.
Remove Balushahi from oil, drain briefly, and immediately immerse in warm sugar syrup for 2–3 minutes to absorb sweetness.
Place on a rack, sprinkle with chopped pistachios, and allow to cool completely for a firm, shiny glaze.
