Turkey and noodle casserole transforms leftover turkey into a creamy, comforting family dinner with egg noodles and vegetables. This protein-packed dish is the perfect way to extend holiday leftovers into a second delicious meal.
Preheat oven to 375°F. Grease a 9x13-inch baking dish with butter or nonstick spray.
Bring a large pot of salted water to a boil. Cook egg noodles until just barely al dente, about 1-2 minutes less than package directions. Drain and set aside.
Meanwhile, melt butter in a skillet over medium heat. Add onions and mushrooms; sauté until onions are translucent and mushrooms are golden, 5-6 minutes.
In a large bowl, combine cooked noodles, turkey, sautéed vegetables, peas & carrots, condensed soup, milk, cheddar cheese, salt, and pepper. Mix gently to coat everything evenly.
Transfer the mixture into prepared baking dish. Sprinkle breadcrumbs evenly over the top.
Bake uncovered for 25-30 minutes, until the casserole is bubbling and the topping is golden brown. Let rest 5-10 minutes before serving.
