Rinse black beans well and soak them in water for at least 6 hours or overnight for best results.
In a large pot over medium-high heat, add 2 tbsp oil. Sear the pork shoulder pieces on all sides until well browned, about 6-8 minutes.
Add soaked black beans (with soaking water), diced onion, whole garlic cloves, carrot slices, bay leaves, and epazote. Cover with enough water to submerge ingredients by 2 inches.
Bring to a boil, then reduce heat to low. Cover and simmer gently for about 2 to 2.5 hours, occasionally skimming foam and adding water if needed to maintain coverage.
Season with salt and black pepper in the last 30 minutes. Cook white rice in a separate pot during the final hour, simmering until fluffy.
Remove pork and shred or cut into chunks. Serve pork and beans ladled over rice, with condiments of your choice.
