Cut the pork shoulder into 2-inch chunks and season evenly with salt and black pepper. Let rest for 10 minutes at room temperature.
Heat vegetable oil in a heavy-bottomed pot over medium-high. Sear the pork in batches until browned on all sides, about 2–3 minutes per batch. Set aside.
Lower the heat to medium. Add sliced onion and cook, stirring, until soft and translucent, about 4 minutes. Add minced garlic and sauté 1 minute.
While onions cook, remove seeds from dried ancho chiles. Toast them in a dry skillet over medium heat for 1-2 minutes, then soak in warm chicken broth for 10 minutes.
Blend soaked chiles, tamarind pulp, brown sugar, apple cider vinegar, cumin, oregano, and the soaking broth until smooth.
Return seared pork and any juices to the pot. Pour in the blended tamarind-chile sauce. Stir to coat all the pork pieces.
Bring sauce to a gentle simmer, cover, reduce heat to low, and braise for 75-90 minutes, stirring occasionally, until pork is fork-tender and sauce is thickened.
Uncover for the last 10 minutes to let the sauce reduce if needed. Taste and adjust seasoning. Serve hot with rice or warm tortillas.
