Wheat noodles are dressed in a tangy Shanxi aged black vinegar sauce with a hint of garlic. This vegetarian-friendly dish is light, fresh, and low calorie—ideal for a quick family lunch.
Bring a large pot of water to a boil. Add the wheat noodles and cook according to package directions until al dente (usually 5–7 minutes). Do not overcook.
While the noodles cook, peel the cucumber and slice into thin matchsticks; finely slice the scallion. Set aside for garnishing.
In a small bowl, combine the Shanxi black vinegar, soy sauce, sugar, and sesame oil. Mince the garlic and stir it into the sauce. Mix well until the sugar dissolves.
Once noodles are done, drain immediately and rinse under cold running water to stop the cooking and remove excess starch. Shake off water thoroughly.
Divide noodles into bowls. Drizzle the black vinegar sauce evenly over noodles, then top with cucumber and scallion. Toss to coat just before serving.
