Lay out 4 flour tortillas on a clean surface; evenly spread shredded chicken across each, then sprinkle with salt, pepper, and the shredded cheese.
Top each with a second tortilla to form a sandwich.
Melt half the butter in the skillet. Carefully add two sincronizadas at a time. Cook for 3-4 minutes on one side until golden brown and crisp, pressing gently with a spatula.
Flip using a wide spatula, add a bit more butter if needed, and cook for another 3 minutes, ensuring cheese is fully melted and both sides are deeply crisp.
