Festive Chinese wedding tea eggs with beautiful marbled pattern symbolize fertility and harmony. A protein-rich, family tradition with aromatic, fresh spice flavor.
Place eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat.
Once boiling, lower heat and simmer for 7 minutes. Remove eggs and cool them under running water.
Gently tap eggshells with the back of a spoon to create cracks all over, but do not peel.
In a clean pot, combine 4 cups water, soy sauce, black tea leaves, star anise, cinnamon stick, Sichuan peppercorns, sugar, and salt. Bring mixture to a boil over medium heat, then reduce to low and simmer for 10 minutes.
Add cracked eggs back to the pot. Simmer on very low heat for at least 1 hour to allow flavor infusion, turning eggs occasionally. For deeper marbling, turn off heat and let eggs soak in the tea mixture for 2–3 hours, or chill overnight in the refrigerator.
When ready to serve, peel each egg to reveal the marbled pattern. Enjoy them warm or cold.
