Firm tofu is stir-fried with tangy pickled mustard greens and dried chilies for a punchy, bold dish. This vegetarian preparation is high in protein and supports a healthy, lower cholesterol diet.
Press the firm tofu for at least 15 minutes to remove excess water, then cut into 1-inch cubes.
Heat 1 tbsp of sesame oil over medium-high heat in a large nonstick pan or wok. Add the tofu cubes and sear undisturbed for 3–4 minutes per side until golden and crisp.
Transfer tofu to a plate. Lower the heat to medium and add garlic and dried red chilies. Stir-fry for 30 seconds until aromatic but not burnt.
Add pickled mustard greens and carrots. Stir-fry for 2–3 minutes, controlling the heat so the pickled vegetables retain their crunch and tang.
Return tofu to the pan and pour in soy sauce, sugar, and rice vinegar. Toss to coat all ingredients and stir-fry for 2 more minutes. Sprinkle with scallions before serving.
