Quesadillas filled with creamy sautéed brains and melted cheese are a bold street food choice. This high protein, carnivore dish offers a rich, velvety texture unique to Mexican antojitos.
Rinse beef brains well, then place in a pot of simmering water. Cook for 8 minutes over medium heat to firm up, then drain and cool.
With brains cool enough to handle, gently pat dry and chop into bite-size pieces. Ensure no excess liquid remains.
Heat 1 tbsp vegetable oil in a skillet over medium heat. Sauté onion until translucent, then add brains, season with salt and pepper, and cook until just creamy and set, about 3-4 minutes. Stir in cilantro and set aside.
Heat another skillet or comal over medium-high heat. Lay out tortillas (work in batches), and sprinkle half with cheese, then top with sautéed brain mixture, finishing with more cheese.
Fold tortillas over filling, press lightly, brush tops with remaining oil, and cook each quesadilla 2-3 minutes per side until golden brown and cheese is thoroughly melted. Serve hot.
