Peel and cut the sweet potatoes into 1/4-inch thick sticks for uniform cooking.
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Drain and thoroughly pat the sweet potato sticks dry, then toss with cornstarch to evenly coat.
Heat vegetable oil in a deep pot over medium-high heat to 350°F (175°C).
Fry the sweet potato sticks in batches (do not overcrowd) for 3–4 minutes until lightly golden and crisp. Remove and drain on paper towels.
While hot, season fries immediately with salt, black pepper, and paprika. Serve hot for best crunch.
