"Drunken salsa" made with pasilla chiles, pulque or beer, and orange juice. This vegetarian condiment brings a unique, tangy depth to family barbacoa and taco feasts.
Heat a skillet over medium flame; toast pasilla chiles for 1–2 minutes until fragrant, turning frequently to avoid burning.
Add olive oil to the skillet and sauté onions and garlic over medium-low heat for 3–4 minutes until softened but not brown.
Transfer chiles, onions, and garlic to a bowl; pour hot water just to cover. Let soak for 20 minutes to soften ingredients.
Drain the chilies and aromatics, then blend them with orange juice, beer (or pulque), and salt until completely smooth.
Pour the blended salsa into a small saucepan and simmer over low heat for 10 minutes, stirring occasionally until the salsa thickens and the flavors meld; season with extra salt if needed.
