Pinched-edge masa rounds topped with salsa, beans, and cheese, a rustic Veracruz specialty. These vegetarian antojitos offer authentic, handcrafted family snacking with simple, fresh flavors.
Combine masa harina, salt, and warm water in a bowl. Stir until a soft, non-sticky dough forms. Cover with a damp towel and rest for 10 minutes to hydrate the masa fully.
Divide the dough into 6 even balls. With slightly damp hands, flatten each ball into a disk about 4 inches wide and 1/3 inch thick.
Heat a large, dry skillet over medium-high heat. Cook each disk for 2 minutes per side until light golden spots appear, adjusting heat to avoid burning.
Remove from skillet and, while still hot, pinch up the edges with your fingers to form a lip, creating the distinctive pellizcada shape.
Heat oil in the skillet over medium. Place pellizcadas flat side down and brush the tops with a little oil. Toast 1 minute per side for crispness.
Spread a spoonful of warm refried beans on each pellizcada base. Top with salsa verde, crumbled queso fresco, onion, and fresh cilantro just before serving. Serve immediately for best texture.
