Start your day with Dhokla Breakfast, a traditional Indian breakfast that's light, nutritious, and satisfying. This healthy vegetarian dish is family-friendly and works well for calorie deficit and clean eating goals.
In a mixing bowl, combine chickpea flour, yogurt, water, salt, turmeric, sugar, and lemon juice. Whisk until smooth and let rest for 15 minutes to help flavors develop.
Just before steaming, add baking soda to the batter and whisk vigorously. The batter should become light and airy with small bubbles.
Pour batter into a well-greased 8-inch heatproof dish. Place in a steamer over simmering water and steam over medium heat for 15–18 minutes, or until a toothpick inserted in the center comes out clean.
While the dhokla is steaming, heat oil in a small skillet over medium heat. Add mustard seeds and let them pop for several seconds, then add chopped green chili and curry leaves, sautéing for another 30 seconds. Remove from heat.
Once steamed, let the dhokla cool for 5 minutes. Cut into squares, drizzle the spiced oil (tempering) evenly on top, and garnish with chopped cilantro before serving.
