In a bowl, combine prawns, turmeric, chili powder, black pepper, garam masala, ginger, garlic, lemon juice, and half the salt. Marinate for 15–20 minutes.
Heat coconut oil in a large skillet over medium-high heat. Once the oil is hot, add curry leaves and sliced onions. Sauté until onions are soft and just starting to caramelize.
Increase heat slightly, add marinated prawns in a single layer. Sear undisturbed for 2–3 minutes until the underside turns golden.
